Vitamin Deficiencies and Excesses
The outstanding achievement of nutritional science has been the discovery of about 50 nutrients essential for man. In 1903, F. Gowland Hopkins recognized the need of organic growth factors now known as vitamins. Sixteen different vitamins have been discovered followed by isolation, elucidation of the structure, and in most cases synthesis of these substances. Identification of the role of vitamins as coenzymes was a major step in the understanding of their role in metabolism and physiology. This has been termed a golden era of nutritional research.
