Food Fortification

Abstract

Considering the theory of nutrient fortification and the successes that well-conceived fortification programs have achieved, it is shocking that probably no other type of nutrition intervention strategy has been more misused or abused. Possibly because nutrient fortification is relatively simple and inexpensive and provides a way in which to reach large numbers of people, it has been beset with problems ranging from poor science to charlatanism. To most of us, fortification of food or water is an attractive way to increase the nutrient intake of a population without the necessity of altering eating habits, and therefore without the need for elaborate, large-scale educational programs.
