Isomerose Syrups Containing Greater than 90% Fructose

Abstract

The enzymic isomerization of glucose to give solutions containing greater than 90% fructose, at very high sugar concentrations, is possible by utilizing the complex forming ability of fructose with oxyanions, specifically germanate. The oxyanion forms a stronger complex with fructose, at the pH of the enzyme reactor, than glucose and displaces the equilibrium in favor of fructose. The oxyanion can be separated from the carbohydrates by ion-exchange chromatography.
