Characterization of Chitosan Film

  • Chapter
Rheology

Abstract

Chitosan [(1-4)-2 amino-2-deoxy-β-D glucan] is deacetylated chitin usually in various degrees of deacetylation and depolymerization. The removal of some or all of the acetyl groups from the chitin liberates amine groups, thus imparting the polycationic nature to the polymer (Muzzarelli, 1977). The cationic and amine containing nature make the chitosan a novel polymer belonging to the group the potential of which has not yet been exploited industrially.
