Hydrophobic Effect on the Intrinsic Viscosity of Globular Proteins

The viscosity of a protein depends on the conformation which is a result of the hydrophobic effect. Most of the hydrophobic side chains are buried in the interior of globular proteins in solution and thus determine the conformation of proteins (Tanford, 1962; Nemethy and Scheraga, 1962; Kauzmann, 1959). Therefore, the viscosity of a globular protein changes when a conformational change of a protein is induced.
