The Interrelationship Between Bile Acids, Bacteria and Dietary Fiber
We have approached this problem as one of physical chemistry and have tried to define the physical characteristics of dietary fiber rather than concentrate on the chemical identification of its constituents (Eastwood, 1973). Current thinking suggests that most of the biological activity of dietary fiber occurs in the colon. It is possible to depict such events as a triangle, in which there is an interaction between bacteria, bile and fiber, all complicated by time spent in the colon (Figure 1).
