Vitamin Deficiencies and Excesses: Behavioral Consequences in Adults

  • Chapter
Book cover Nutrition and Behavior

Abstract

Vitamins are organic chemical substances that the body requires for its metabolism and cannot synthesize for itself. They are therefore needed in the diet. Deficiency may cause physical, mental, and behavioral effects. Vitamins are traditionally divided into fat-soluble and water-soluble, and it is probably true that psychological abnormalities encountered in clinical practice are more often associated with deficiences of water-soluble vitamins than with deficiencies of fat-soluble vitamins. Some substances are grouped as vitamins, but deficiency of these apparently does not occur spontaneously. These substances will be considered separately.
