Toxic Substances and Some Folk and Medicinal Uses of Vegetables

Abstract

Overall, vegetables are generally recognized as safe when appropriately used. They provide many nutritional benefits that contribute to health and its maintenance. Briefly described are some medicinal benefits of several vegetables, the types and functions of toxicants found in plants, how they affect humans, and those vegetables that contain toxic compounds.
