Abstract

The sensory analyst at Company B was asked to determine the answers to the following questions, about suspected taint in new confectionery lines of boxed chocolates:
  • Is there a detectable difference in odor/flavor from the standard?

  • How is the odor/flavor described and how strong is it?

  • What is the source of the taint?
