Abstract

In Chapter 2, major chemical components and some minor ones present in mature soybeans were discussed in terms of their occurrences, properties, and nutritional values. However, since the soybean is a living seed tissue, it undergoes many changes as soon as it begins to develop. Some changes are not only biological and compositional but also morphological and cytological. Therefore, the subject has been a research focus for food scientists, nutritionists, plant physiologists, and agronomists.
