Abstract

The average human adult secretes from 1–2 liters of saliva daily, which helps keep the mouth wet, aids speech, and lubricates food for easier swallowing. Dry mouth results when saliva is scanty. The enzyme in saliva, ptyalin, is secreted in the salivary gland as zymogen granules (Fig. 21.1).
