Abstract
Food and drink are prepared and consumed as a matter of custom, to satisfy the pangs of hunger and thirst, and as one of the more delightful social activities of man. It is only as an afterthought that the ordinary person pays attention to the nutritional value of food and drink. For the masses in developing countries, knowing where tomorrow’s meal is to come from presents a constantly recurring problem. It is only in recent years that those who live in technologically developed societies have been made increasingly aware of the possible hazards to health of excessive consumption. Attention in this regard has mainly been directed toward the major energy sources, fats and carbohydrates, but consideration also needs to be given to some vitamins and elements.
