Abstract
Liquid crystals of lecithin plus mono-, di-, tri- and tetra- ethylene glycols were identified as lamellar with low angle X-ray diffraction determinations and from their optical patterns in polarized light.
The results showed enhanced perturbation of the lecithin molecules with concentration of the solvent and increased chain length. Replacing one terminal OH group with an ethoxide group enhanced this trend, as did substitution of the ethylene group with a propylene group.
