Abstract
There are two main aims to the scientific research underlying the production of powdered milk (formulas) destined for feeding infants who are not breast-fed: to make such formulas as similar as possible to breast milk, and to obviate against the increasingly frequent phenomena of intollerance of cow’s milk, generally used as a substitute for breast milk. Biotechnological techniques are thought to have a possible useful application above all in the production of hypoallergenic milks.
