Implications of Sweetness in Upbringing and Education

Abstract

According to The Shorter Oxford English Dictionary, education means “the systematic instruction, schooling or training given to the young (and, by extension, to adults) in preparation for the work of life”. From the point of view of nutritional education, Fidanza Alberti (1975) also mentions and emphasises the learning of “intellectual and moral principles (taking into account) the demands of the individual and of the society.” It should be unnecessary to stress the fact that education involves, implicitly and explicitly, notions and methods which are cognitive and rational, as well as ideological, moral and even affective considerations. Many specialists in the science of Education underline the “art” aspect of the educational process (in the same sense as “medical art”), in other words those matters not reducible to a simple experimental process. Furthermore the definition of food, of what is considered edible, “good” for one and for the organism, also involves experience and beliefs. It is obvious in the present state of knowledge that food is not only a matter of its nutritional or sensory qualities, but is also concerned with explicit and implicit cultural rules (Douglas 1966; Lévi-Strauss 1966, 1968). Let us, however, emphasise that this has only relatively recently become obvious because the Humanities have neglected this area for a long time.
