Abstract

The sommelier is the waiter who serves the wines and other drinks at table in the restaurant and a good-class establishment finds it is absolutely essential to employ separate waiters for this important aspect of restaurant service. Restaurateurs realise the need for a person who is very knowledgeable on the subject of wine so as to ensure that sales of this commodity are maximised. A good sommelier can advise on what wine links best with a particular food and so market the products with such mastery, that the sales turnover always produces a high profit.
