Rheology of Unheated Gellan Gels

Abstract

Gellan is a linear anionic extracellular polysaccharide, which forms gels with different strength depending on the gum and salt concentrations and the cations present. By using sequestrants such as EDTA, it is possible to prepare unheated gellan gels. These gels are physical gels and are thermoreversible. The rheology of unheated gellan gels has been examined as well as the rheological behavior of concentrated gellan aqueous solutions in presence of EDTA around the gel point.
