The effects of monounsaturated fatty acids on serum lipoprotien levels in healthy adult volunteers
Abstract
The effects of monounsaturated fatty acids on serum lipids were studied in healthy women and men in two separate well-controlled dietary studies. In the first study it was shown that replacement of saturated fatty acids by either monounsaturated fatty acids or carbohydrates caused similar changes in serum total and LDL cholesterol levels. The HDL cholesterol level, however, was significantly lower on the diet high in carbohydrates. In the second study it was found that replacement of saturated fatty acids by a mixture of monounsaturated and polyunsaturated fatty acids caused similar serum lipid levels as replacement with polyunsaturated fatty acids alone.
It is concluded that replacement of saturated fats by oils rich in monounsaturated fatty acids might be an attractive option for optimizing serum lipid levels.
