Abstract

This chapter provides the diffusion coefficient of water in saccharose at different concentrations measured using Rayleigh interferometry, NMR spin echo pulse gradient, NMR spin echo field gradient, Gouy interferometry, diaphragm cell and Taylor dispersion technique.
