Economic Aspects of Functional Foods

Abstract
Once taken to be an exclusively Japanese phenomenon, functional foods have meanwhile entered the mainstream and are here to stay. Despite drawbacks, the food industry in developed countries is continuously launching new products in this market segment. A combination of ageing populations, health awareness campaigns, scientific research into the link between food and health as well as improvements in food technology have opened new possibilities for the food sector.
