Abstract

The seed is a storage organ providing nutritional substances to the germinating embryo. Two main groups of compounds are found in every seed: the carbohydrates, in general comprising the greatest part of the seed, and the proteins. Moreover, the lipids and a considerable number of further substances are present. The amount and composition of these substances are genetically controlled. Most information is available in seed proteins, therefore this part is discussed more in detail.
