Food Protein-Induced Enterocolitis Syndrome: A Healthcare Professional Parent Perspective
The nomenclature and idea of food in everyday life can be strongly shaped by culture. Some cultures are food-centric, may perceive food as a way of life, and even “live to eat.” When faced with food intolerance or allergic disease related to food, “eating to live” brings a whole new perspective into a food-centric family’s way of life. Food started making a family member sick and was challenging to identify why. This chapter will discuss a family’s journey leading to and through a diagnosis of food protein-induced enterocolitis syndrome (FPIES). Perspectives throughout this chapter not only come from a mother of a child with FPIES but also a seasoned adult critical care nurse and an academic nurse educator.
