Biosensors for Automatic Measurement in Winemaking Process Monitoring

Abstract
An automatic measurement system for the monitoring of winemaking process is described and characterized. The proposed system integrates amperometric biosensors for on-line measurements in FIA of glucose, ethanol, lactic acid and phenols, during the winemaking process. While this kind of measurement usually requires the intervention of human experts, the proposed system automates all measurement process: both the sampling and the analyte measurements are managed by a central unit based on a microcontroller.
