Chemical and lipid composition of muscle tissue of goat kids of the russian dairy breed depending on milk yield of does

Abstract

The meat quality of goat kids of different ages obtained from poor-, moderate-, and high-milk yielding does is investigated. The content of moisture in muscle tissue decreases with age of kids regardless of the milk yield of does, which leads to an increase of the level of dry matter due to an increase of fat content. The content of tryptophan and hydroxyproline and the protein quality index in all age periods is at a high level irrespective of the does’ milk yield. The content of lipid fractions in all animals increased with age.
