Dr. Arun Kilara is a professor of food science at Pennsylvania State University.

Dr. Tawfik Sharkasi is the section manager of dairy chemistry and cheese technology at Kraft General Food Company. He has a PhD degree in food science from Pennsylvania State University. Prior to joining Kraft General Foods in 1990, he was the manager of product development at the Pepsi Cola Company.
