The Content of Vitamin C in the Grape Grown under the Conditions of Southwestern Siberia

Abstract

The grape is a highly valuable food stuff owing to the presence of a number of biologically active substances, and vitamins occupy a special place among them. Vitamin C (ascorbic acid) is one of the important and the most studied component of the grape berries. Ascorbic acid from the plant tissue participates in the redox metabolism, and, thus, increases a resistance of plant organisms to infections and low temperatures. Determination of the concentration of vitamin C in the plant material is important both for a selection and for a revelation of the most resistive and competitive cultivars. The goal of this study was an examination of the content of vitamin C in the grape berries which were grown under the conditions of southwestern Siberia. In particular, 12 introduced cultivars and selected forms from the collection of the Lisavenko Research Institute of Horticulture of Siberia were studied. The studies demonstrated that the accumulation of ascorbic acid in the grape berries depended on the weather conditions. We identified five genotypes with a high content of vitamin C. The ripening period of berries, their color, the purpose of their use, and ecological and geographical origin of the cultivars and selected forms were found to have no influence on the accumulation of vitamin C in the period from 2014 to 2016.
