Abstract
A method is proposed for the determination of phospholipids in a starch matrix. It is based on the chemical gelation of starch in a mixture starch-phosphatidylcholine using dimethyl sulfoxide followed by the quantification of phosphorus in the gel formed by 31P NMR in the presence of a standard, tributyl phosphate. The method makes possible the determination of phospholipid concentrations below one percent in no relation to its state in the starch matrix.
