Indirect redox potentiometric method of determination of the antioxidant number with the use of modified equations

Abstract

An indirect method is proposed for determination of the antioxidant number with the use of modified equations involving a simplified parameter that depends on the measured redox potentials. This method provides the antioxidant number as the amount (mg) of K3[Fe(CN)6] consumed in oxidation of antioxidants present in 1 g of product.
