Destruction and Hydrolysis of Proteins in Their Electrochemical Extraction

Abstract

An electrochemical method was used to extract proteins from a dispersed protein-containing raw material. Cleavage of disulfide and peptide bonds in protein solutions in the course of electrochemical extraction and dissolution of proteins was studied.
