Rheological properties of the water-soluble mucilage of a green laver, Monostroma nitidium

Abstract

A study was made to explore the rheological properties of the water-solublemucilage of a green laver, Monostroma nitidium. The apparentviscosity of the water-soluble mucilage decreased with increasing shear rate,with increasing solution temperature (from 4 to 70 °C), withincreasing NaCl concentration from (0.5% to 2.0%), and decreasedslightly with a shearing time for 60 min. The decreases in the apparentviscosity were more pronounced for higher-concentration water-solublemucilage. However, it increased with increasing solution pH from pH 3 to 9.
