Abstract

Obtaining an essential oil from the lily-of-the-valley (Convallaria majalis L.) that embodies the characteristic smell of the living flowers is not possible even today. Challenged by this pitfall, organic chemists and perfumers have generated a wealth of artificial compounds over the last 120 years, which confer fresh, green, flowery, crisp, aldehydic muguet notes to soaps, detergents, body care and cosmetic products as well as to prestigious perfumes. Nowadays, lily-of-the-valley odorants account for over 20% of the total perfumery raw materials market, which makes them the most important odor family, not only in terms of value but also in volume.
