Hepcidin, ein kleines Protein mit 25 Aminosäuren, ist der zentrale Regulator des Eisenstoffwechsels bei höheren Säugetieren. Es begrenzt die Eisenaufnahme aus dem Darm und die Freisetzung von Eisen aus dem Hämoglobinabbau.
