The morphology of two types of emulsions, i.e., milk fat in water and liquid paraffin in isopropyl alcohol of various concentrations, was studied by electron spectroscopy in the UV and visible regions. The developed method was based on an analysis of the component scattering the electromagnetic radiation passing through the sample and allowed the particle size and the size distribution of the scattering particles (drops) to be determined. It was found that the particle size increased as the concentration of the disperse phase increased. This conclusion was confirmed by independent research methods, i.e., dynamic light scattering and optical microscopy.
