A New Azaphilone Derivative from the Monascus kaoliang Fermented Rice

Investigation of the 95% EtOH extract of red mold rice fermented with the red mutant of the fungus Monascus kaoliang led to the isolation of one new azaphilone derivative, namely monakaocinol (1). The structure was determined by analyses of mass spectrometry and 1D and 2D NMR data. The relative configuration of the isolated compound was assigned on the basis of 2D NOESY experiments.
