Zusammenfassung
Früchte der Himbeersorten ’Resa’, ’Rumiloba’, ’Schönemann‘ und ’Tulameen‘ wurden entsprechend der Reifestadien halbreif, reif und hochreif mittels des CIE L*a*b*-Systems objektiv klassifiziert und wie folgt gelagert: 0 Tage (Frischware), 1 Tag bei 20°C Zimmertemperatur und 3 Tage bei 2–4°C plus 1 Tag bei Zimmertemperatur. Beurteilt wurden die Parameter Gewichtsverlust, Fruchtfestigkeit, Haltbarkeit sowie, mittels deskriptiver Analyse, die sensorischen Eigenschaften der Früchte. Dargestellt werden: der Einfluss der Sortenunterschiede unabhängig von Reifegrad und Lagerung, der Einfluss des Reifegrads unabhängig von der Lagerung sowie der Einfluss des Reifegrads in Kombination mit den Lagervarianten auf die genannten Qualitätsparameter. Im Hinblick auf ein gutes „shelf-life“ in Kombination mit einer guten sensorischen Beurteilung der Früchte, d. h. mit einem ansprechenden Geschmack und einer hohen Beliebtheit, können halbreife, gelagerte Früchte von ’Resa‘ und ’Tulameen‘ sowie reife Früchte beider Sorten unabhängig von den Lagerbedingungen herausgestellt werden. Halbreife gelagerte und reife Früchte von ’Rumiloba‘ sind wegen ihres eingeschränkten „shelf-life“ nur für eine Vermarktung mit begrenzten Transportwegen geeignet. ’Schönemann‘ erfüllte die gestellten Forderungen nicht.
Summary
Fruits of the raspberry varieties ’Resa’, ’Rumiloba’, ’Schönemann’ and ’Tulameen’ were analysed at three objectively defined ripening stages (semi ripe, ripe and slightly over ripe) and three different storage conditions (0 d=fresh fruits, 1 d=stored for 1 day at 20°C room temperature and 3 d=3 days at 2–4°C followed by 1 day at room temperature). Investigations were made to determine weight loss, fruit firmness, shelf life and descriptive analysis of sensory attributes. The results describe the influence of varieties, the influence of ripening stage and/or storage conditions on different quality parameters. Semi ripe and ripe fruits of the varieties ’Resa’ and ’Tulameen’ showed best results with regards to shelf life and sensory attributes independent of storage conditions. Stored semi ripe fruits as well as ripe fruits of ’Rumiloba’ showed a limited shelf life and appear to be suitable for transport within restricted areas only. ’Schönemann’ did not meet the requirements.
