Sucres simples purifiés versus sucres des fruits, ont-ils les mêmes effets métaboliques?

Do fruit sugars have the same metabolic effects as simple sugars?

Résumé

L’alimentation actuelle est particulièrement riche en sucres purifiés alors que la contribution énergétique des glucides complexes a fortement diminué. Les conséquences nutritionnelles négatives (syndrome plurimétabolique) induites par une consommation élevée de produits sucrés sont exercées principalement par le fructose, un sucre naturellement présent dans les fruits. Dans ces conditions, peut-on recommander leur consommation? La réponse est positive dans la mesure où dans les fruits l’environnement du fructose en fibres, sucres alcool, acides organiques et micronutriments leur permet d’exercer des effets favorables sur la santé.

Abstract

The modern diet is particularly rich in simple sugars whilst the amount of energy provided by complex carbohydrates has significantly decreased. The negative nutritional consequences (plurimetabolic syndrome) of consuming large quantities of sweetened foodstuffs are mainly caused by fructose, a sugar which is present naturally in fruit. This being the case, is it right to recommend the consumption of fruit? The answer is yes, in that the fructose is in an environment which also contains fibre, sugar alcohol, organic acids and micronutrients, all of which enable the fruit to have a beneficial effect on health.
