Abstract

Fumonisin mycotoxins are a group of structurally related secondary metabolites produced by the fungus Fusarium moniliforme. For the quantitative determination of fumonisin FB1 in corn products, a rapid method without any additional clean-up or purification of the sample extract was developed utilizing high-performance liquid chromatography-electrospray mass spectrometry. Using labelled fumonisin FB1–D6 as an internal standard the quantification limit for FB1 was set at 20 ng/g sample with a signal-to-noise ratio of 10 : 1.
