Zusammenfassung
Die Beschäftigung mit der Ernährung und die Einhaltung spezieller Ernährungsformen haben in den letzten Jahren enormen Zulauf bekommen. Es ist durchaus begrüßenswert, dass das Wissen um die Ernährung und der nachhaltige Umgang mit Lebensmitteln einen höheren Stellenwert erlangt haben. Es sollte allerdings auch daran gedacht werden, dass es bei einer eingeschränkten Lebensmittelauswahl zu Nährstoffdefiziten kommen kann, die entsprechend ausgeglichen werden sollten. Bei allen restriktiven Ernährungsformen ist zur Sicherstellung der ausreichenden Nährstoffversorgung wichtig, sich gut auszukennen und alternative Lebensmittelquellen zu kennen. Betroffen sind bei der veganen Ernährungsform bei den Hauptnährstoffen das Protein und bei den Vitaminen vor allem die Vitamine B2, B6 und B12 sowie Vitamin D. Auch Mineralstoffe, vor allem Kalzium, Eisen, Jod, Selen und Zink, können aufgrund ihrer geringeren Nährstoffdichte sowie ihrer schlechteren Verfügbarkeit häufig nicht in ausreichender Menge mit veganen Lebensmitteln aufgenommen werden. Im Beitrag werden Beispiele für Auswirkungen einer unzureichenden Nährstoffversorgung bei Mädchen vorgestellt (Einnahme von oralen Kontrazeptiva, Knochen‑, Eisenstoffwechsel, häufig vorkommende Harnwegsinfektionen). Neben dem Aspekt der Nährstoffversorgung sollte auch der Aspekt berücksichtigt werden, dass sich hinter bestimmten Ernährungsweisen eine gesellschaftlich akzeptierte Essstörung verbergen kann.
Abstract
The preoccupation with the nutrition and the adherence to special forms of nutrition have become very popular in recent years. It is definitely gratifying that the knowledge concerning the nutrition and the sustainable approach to food have achieved a high value; however, it should also be considered that with a limited selection of foodstuffs a deficiency of nutrients can occur, which should be correspondingly supplemented. In all restricted forms of nutrition, it is important to be well informed and to know the alternative food sources in order to guarantee a sufficient supply of nutrients. In the vegan form of nutrition, the main nutrients concerned are proteins and for vitamins particularly important are the B vitamins B2, B6 and B12 as well as vitamin D. The uptake of minerals, in particular calcium, iron, iodine, selenium and zinc, can frequently be insufficient in vegan forms of nutrition due to the lower nutrient density and poor availability. This article presents examples of the effects of an insufficient supply of nutrients in young girls (use of oral contraceptives, bone and iron metabolism, frequently occurring urinary tract infections). In addition to the aspects of nutrient supply, another aspect to be considered is that a socially accepted eating disorder can be hidden behind certain forms of diet.
