Computer Support for Tracking, Tracing and Quality Assurance Schemes in Commodities

Abstract.

Food safety and quality assurance control are at the centre point of discussions on the development of a competitive and sustainable food production in Europe and beyond. The focus is especially on the organization of appropriate systems for tracking and tracing as a baseline infrastructure investment on which further quality assurance activities along the food supply chain within the competitive food supply networks could build. The pressure on the sector is from policy with new regulations on tracking and tracing as well as from retail groups who ask for process transparency throughout the chain. It incorporates all product lines including the traditional bulk products like commodities where, traditionally, not the identification of product flows was of interest but the elimination of product differences through complex mixing and separation activities. The paper deals with the potential utilization of computer-based systems in tracking and tracing support (especially in the more complex commodity markets) that fit the business relationships in various business scenarios in food safety and quality assurance control. It builds on ongoing activities in the business environment that are scarcely reported in literature yet.

Zusammenfassung.

Die Sicherung der Unbedenklichkeit und Qualität von Lebensmitteln steht im Zentrum von Diskussionen um die Entwicklung einer nachhaltigen und wettbewerbsfähigen Nahrungsmittelproduktion in Europa und darüber hinaus. Eine besondere Bedeutung kommt dabei Fragen zur Organisation geeigneter Systeme zur Rückverfolgbarkeit zu, die die Grundlage für die Umsetzung anspruchsvollerer Aktivitäten zur Qualitätssicherung in Produktionsketten und Unternehmensnetzwerken der Ernährungswirtschaft bilden. Der Anstoß zur Organisation solcher Systeme kommt in erster Linie über politische und rechtliche Vorgaben sowie aus Anforderungen des Handels an die Transparenz über alle Stufen der Produktionskette. Die Anforderungen schließen alle Produktionslinien ein, u. a. auch die traditionellen Massenprodukte wie etwa Getreide, bei denen sich das Interesse bisher weniger auf die Identifikation der Produktionsprozesse, sondern auf die Verminderung von Qualitätsdifferenzen über komplexe Misch- und Trennvorgänge bezog. Der Artikel setzt sich mit der potenziellen Nutzung computergestützter Systeme zur Unterstützung der Rückverfolgbarkeit und speziell der Rückverfolgbarkeit bei Massengütern auseinander, die sich in verschiedenen Szenarien der Sicherung der Unbedenklichkeit und Qualität von Lebensmitteln in bestehende Geschäftsbeziehungen integrieren lassen. Er greift dabei auf aktuelle Entwicklungen zurück, die bisher noch kaum in der Literatur dokumentiert worden sind.
