Zusammenfassung
Die orale Nickelaufnahme durch Lebensmittel kann bei Patienten mit einem hämatogenen allergischen Kontaktekzem zu einer Verschlechterung der Symptome führen. In Deutschland erhältliche Lebensmittel wurden, in Abhängigkeit von der geologischen bzw. regionalen Herkunft, den lebensmitteltechnologischen und -chemischen Eigenschaften, auf ihren Nickelgehalt verglichen und dargestellt. Durch spezifische Inhaltsund Zusatzstoffe im Lebensmittel liegt Nickel in unterschiedlichen Elementbindungsformen vor, so daß die Resorption von der Gesamtzusammensetzung eines Lebensmittels abhängig ist.
Summary
The oral intake of nickel can cause flareup reactions in patients with an endogenous nickel contact eczema. Foodstuffs on sale in Germany were compared and analysed for their nickel content depending on their geological and regional origins, influence of industrial processing and chemical characteristics. Since the natural contents of the food itself and additives give rise to a number of different nickel compounds, the bioavailability of nickel depends on the overall food composition.
