Samenvatting
Al sinds lange tijd worden neveneffecten van voedsel beschreven. Deze zijn grofweg onder te verdelen in twee soorten. De eerste betreft overgevoeligheid voor voedingsbestanddelen leidend tot ernstige ziekte, zoals voedselallergie die via IgE tot stand komt. De tweede is het optreden van hyperactiviteit, vooral bij kinderen, waarvan wordt verondersteld dat er een relatie is met voedsel en dan met name met conserveermiddelen en toegevoegde geur-, kleur- en smaakstoffen.
