Les allergies alimentaires: Qui tester? Que tester? Comment tester?

Résumé

La fréquence des allergies alimentaires a doublé en quinze ans. La prévalence dans la population générale est évaluée en France à 3,2%. Elle est trois fois plus élevée chez l’enfant que chez l’adulte: elle est estimée à 8,5% chez l’enfant d’âge pré-scolaire. L’allergie alimentaire correspond à une réaction clinique à l’ingestion d’aliments initiée par un mécanisme immunologique. Les répercussions des allergies alimentaires sont multiples: familiales, sociales, scolaires ou professionnelles, voire financières.
