Summary
Variations in iodine value in safflower oil from 87 to 149 were based mostly on differences in levels of oleic and linoleic acid. Levels of oleic acid varied from 8.9 to 86.8%, and linoleic acid from 8.7 to 84.6%. Excepting two samples from Israel, which had 10.8 and 11.2% stearic acid, there was a close positive correlation between iodine value and linoleic acid and a close negative correlation between iodine value and oleic acid.
