Abstract

Of the many yeast specie scapable of fermenting inulin, some can produce sufficient amounts of ethanol from the substrate, in particularKluyverotmyces fragilis andTorulopsis colliculosa. The results indicate the feasibility of producing ethanol from inulin-rich plants, such as Jerusalem artichoke.
