Anticipated changes in consumption of fresh potatoes by Northeast consumers in relation to their purchase, use, and socio-economic characteristics

Abstract

Per capita consumption of fresh potatoes has decreased over the past two decades. A continuation of this trend could pose severe economic difficulties for firms involved in the production, marketing, and retailing of fresh potatoes. An understanding of the factors that will influence future fresh potato consumption is essential.

This study examined anticipated fresh potato consumption of Northeast consumers and the factors influencing it. Expected consumption was analyzed with regard to purchasing patterns, usage, problems encountered and socio-economic characteristics. The predominate factors influencing anticipated fresh potato consumption were age, family composition, and income. A large percentage of those families anticipating increased consumption tended to be younger, have children 13 years old or less, and be in the lower income brackets as compared to families planning decreased consumption.

Resumen

El consumo per capita de papa fresca ha disminuido en las últimas dos décadas. La continuación de esta tendencia podría significar dificultades económicas para las empresas que producen, distribuyen y venden al por menor papa fresca. Es esencial comprender los factores que influirán sobre el consumo de papa fresca en el futuro.

Este estudio examinó el consumo futuro de papa fresca entre los consumidores del Noreste y los factores que influyen sobre él. Se analizó el consumo esperado con relación a los patrones de compra, utilización, problemas encontrados y características socio-económicas. Los factores predominantes que influyen sobre el consumo futuro de papa fresca son la edad, la composición de la familia y el ingreso. Un porcentaje grande de las familias cuyo consumo experimentará un aumento tiende a ser más joven, a tener hijos de 13 años o menores y a estar en el estrato de ingreso más bajo, en comparación con las familias que están planeando disminuir su consumo.
