The tomatoes discussed in this article are those intended for processing as opposed to fresh market tomatoes. Processing tomatoes are used in soups, sauces, catsup, and pastes, as well as in prepared foods such as frozen pizza, canned spaghetti, and canned and frozen lasagna. Processing tomatoes are almost always bought in bulk from growers by processing firms such as Del Monte, Hunt, and Contadina.

While researching his monograph Destalking the Wily Tomatohe became associated with the Department of Applied Behavioral Sciences, University of California at Davis.
