Abstract
The fatty acid composition of serum, liver and adipose tissue from Pitman-Moore miniature swine was determined following their consumption of starch- or sucrose-containing diets for a period of one year. Among the tissues studied there were no significant differences in the fatty acid composition due to the type of dietary carbohydrate (starch or sucrose). The cholesteryl ester fatty acid composition of all samples studied remained quite constant. There were minor fluctuations in fatty acid composition of phospholipids and triglycerides from serum collected at diferent intervals following initiation of the diets.
