Summary
Replacement of cooked potato by raw potato reduced the digestibility of dietary nitrogen. The nitrogen of raw Majestic, Ulster Brevet and Ulster Lancer varieties appeared to be less digestible than the nitrogen of raw Pentland Crown. Protease inhibitor activity was identified in all the raw potato stocks but did not reflect varietal differences in nitrogen digestibility. Storage from October to February and level of nitrogenous fertilizer did not affect digestibility.
