Summary
The cooked texture of 18 varieties grown under field conditions, and 6 varieties grown in pots were compared with compressive strength measurements and a retained weight method. Highly significant correlations were found between these two methods, indicating that compressive strength is a measure of intercellular adhesion.
Zusammenfassung
Die Textur von gekochten Knollen von 18 Sorten, angebaut unter Feldbedingungen (Abb. 1), und von 6 in Töpfen herangezogenen Sorten wurde verglichen, indem Druckstärkemessungen und eine Methode zur Ermittlung des Restgewichtes durch Schütteln angewendet wurden. Die Würfelproben für diese beiden Methoden stammer von den gleichengekochten Knollen. Mit der sog. Restgewichtsmethode wird der Gewichtsverlust nach dem Schütteln und Abfiltrieren der Muster, der auf die Trennung der Zellen oder Zellgruppen zurückzuführen ist, gemessen. Es wird angenommen, dass diese Trennung von der Zelladhäsion des Musters abhängt. Da mit diesen beiden Methoden hohe signifikante Korrelationen zwischen der geprüften Textur gefunden wurden,

Résumé
Les auteurs ont comparé la texture, à l'état cuit, de 18 variétés de pommes de terre qui se sont développées au champ (fig. 1) et de six variétés développées en pots (fig. 2) au moyen de mensurations par une force de compression et de la méthode du poids retenu après agitation. Les échantillons de cubes pour les deux méthodes provenaient des mêmes tuberculescuits. La méthode du poids retenu mesure les pertes de poids, après agitation des échantillons, qui sont dues à la séparation des cellules ou groupes de cellules supposée être dépendantes de l'adhérence cellulaire de l'échantillon. Les auteurs ont trouvé des corrélations hautement significatives entre les textures mesurées par les deux méthodes:

pour les moyennes des 18 variétés r=−0,9295 au seuil P≤0,001 (fig. 1);

pour les données individuelles de chaque tubercule des 6 variétés r=−0,8697 au seuil P≤0,001 (fig. 2); en fonction de ces résultats, les auteurs considèrent que la force de compression est également un bon indicateur de l'adhérence cellulaire.
