Carcass composition of sudanese calves fattened on diets containing different levels of concentrates

Summary

Carcass comparisons of three groups of calves of indigenous Sudanese breeds fed for 56 days on three planes of nutrition as represented by varying levels of concentrate feed were studied.

Calves fed on the two diets with concentrates had heavier carcass weights and higher dressing out percentages than those fed lucerne hay alone.

Carcasses of the first two groups also contained more dissectable fat and had larger ‘eye’ muscle areas. No significant differences were found amongst the groups in percentage bone or percentage lean meat or in fat thickness over the L.dorsi ‘eye’ muscle.

The plane of nutrition did not significantly influence the proportions of the different wholesale cuts in the carcass.

Résumé

Trois groupes de veaux soudanais ont été nourris pendant 56 jours à l'aide d'une ration alimentaire comportant pour chaque groupe un niveau particulier d'aliments concentrés, et leurs carcasses comparées. Les veaux appartenant aux deux groupes nourris aux concentrés ont donné des carcasses plus lourdes et d'un rendement plus élevé que celles provenant du groupe dont les veaux ont reçu uniquement de foin de luzerne.

Les carcasses des deux premiers groupes contenaient également plus de graisse de couverture et la surface de leurs sections musculaires était plus étendue. Aucunes différences significatives n'ont été mises en évidence entre les groupes en ce qui concerne les pourcentages en os et en viande maigre ou dans l'épaisseur de la graisse au-dessus de la masse musculaire duL. dorsi.

A la découpe on a pu observer que ces différents plans d'alimentation n'ont significativement pas influencé la proportion entre les différents morceaux de la carcasse.

La comparación de las carcasas de tres grupos de terneros de raza indígena sudanesa alimentados durante 56 dias con tres niveles de nutrición, representados por nivelesvariables de alimento concentrado, fue estudiada.

Los terneros alimentados con dietas que contenían concentrados tuvieron ganancias de peso mas altas y mayor proporción de carne que aquellos alimentados solamente con alfalfa.

Las carcases de los dos primeros grupos tambien contenían mas grasa de fácil disección y tuvieron las areas del ‘músculo del ojo’ mas grandes. No se encontraron diferencias significativas entre los grupos en los porcentajes de hueso y carne mollar ó en el grosor de la capa de grasa sobre el ‘músculo del ojo’L. dorsi.

El plano de nutrición no influenció en forma significativa las proporciones de los diferentes cortes en la carcasa.
